Description:

The Director of Food & Beverage directs and coordinates the management-related activities of all food and beverage outlets throughout our hotel properties. Among its responsibilities are planning, budgeting, organizing, directing and coordinating all food and beverage operations; policies and procedures for delivery of superior food and beverage product/service which exceed the guest expectations and hotel standards; training of all food and beverage management personnel. 

Responsibilities will include:

  • Cooperate with Recruiting Manager on hiring Servers/Foodrunners/Bartenders
  • Monitor the 16 hour on-boarding (assure that the on-boarding packets are submitted for all hires in timely manners.
  • Create Manager onboarding
  • Focus on surpassing weekly sales goals (monitor bed sales, lotion sales and food and beverage sales, aquavaults)
  • Monitor the Budget
  • Evaluate servers/food runners test
  • Organize the Food and Beverage testing
  • Compile Food and Beverage packets for team members
  • Responsible for obtaining server tags, flags, coolers and tables
  • Focus on increasing the guest check average
  • Monitor the productivity sheets for the F&B properties
  • Attempt to increase the number of positive TA comments
  • Certifications Alcohol/Food (assure that team members are completing the food and alcohol course within 30 days of being hired)
  • To maintain relationships with hotels (submit the touches sheet on a weekly basis, be present at several daily hotels' line ups, attend the hotels' weekly meeting)
  • Submit the staffing needs on a weekly basis
  • To coach team members on suggestive upgrading techniques
  • Assure the glass and plastic straws are not being used on the beach
  • Attend Director meetings and MLC
  • F&B Manager/Company meetings
  • Endeavor to create leaders in the company
  • Hold team members and managers accountable (issue written warning documentations, suspension or termination forms)
  • Monitor water/soda inventory
  • Verify the inventory deductions before they get turned in
  • Verify the beach and F&B schedules
  • Coverage on a daily basis
  • To maintain the integrity of the F&B hut
  • Develop and implement policies and procedures for food and beverage
  • Monitor employee dress codes and grooming according to policies and procedures
  • Supervision of daily paperwork and
  • Supervision of all Comp's and Voids
  • Minimize number of customer complaints
  • To evaluate managers
  • Complete the weekly property walkthroughs
  • Ensure proper beach aesthetics are up to BB standards and are widespread throughout the beach

 

Required Skills & Experience: 

  • Bachelors degree or higher in Food Service Management, Culinary Arts or Hospitality Management
  • 3-5 years of progressive management experience in large, up-scale, high volume, multi-outlet hotel environment. At least 2 years of experience as a Food & Beverage Director, preferred
  • Thorough knowledge of all aspects of food and beverage planning, production, presentation/service, control
  • Ability to develop and maintain effective operating and control processes designed to attain maximum operating efficiency while ensuring adherence to established guest service criteria
  • Effective management, leadership, organizational and communication skills
  • Ability to work flexible schedule to include weekends and holidays
  • Excellent written and verbal communication
